Ingredients

  • 1kg Beef Brisket
  • 2 Onions
  • 6 Bay leavers
  • 2 tbsp Light Brown Sugar
  • 1 tbsp Tomato Purée
  • 1 x 300ml Bottle Lager
  • 350ml Beef Stock
  • 1tbsp Cider vinegar (optional)

For the Rub

  • 2tsp Cayenne pepper
  • 2 tsp Mustard powder
  • 2 tsp freshly ground cumin powder
  • 2 tsp Celery seeds
  • sea salt and freshly ground black pepper
